Pop brasejat amb parmentier de patata i poma

Saps que els peixos també tenen temporades com les verdures o les fruites. Doncs sí, per això avui volem compartir aquesta guia sobre els peixos.


S’ha perdut el costum d’anar al mercat, on hi ha diferents parades de peix i on és més fàcil trobar moltes més espècies de llotja, peixos salvatges, de proximitat i més econòmics.

Si ens fixem en  l’estacionalitat, podrem fer-ne un consum sostenible i de proximitat. Per exemple, durant la tardor podem trobar pop.
 Anima’t a anar a mercat perquè trobaràs altres varietats i fins i tot et donaran idees per cuinar-les. Et portem aquesta setmana una recepta que segur que t’agradara!

Pop roquer amb parmentier de patata i poma

Ingredients:

  • Un pop.
  • Fulles de llorer.
  • Dues patates de Prades mitjanes.
  • Una poma de Girona una mica àcida.
  • Oli.
  • Llet, nata o formatge suau.

Elaboració:
Congelarem el pop un mínim de 15 dies per trencar la fibra, una vegada descongelat posarem aigua i sal a bullir junt amb les fulles de llorer, i quan bulli l’aigua hi introduirem el pop 3 vegades posant-lo i traient-lo, tot seguit el deixarem coure entre 35 i 40 minuts punxant-lo per veure si ja és tou o si el deixem una miqueta més. Tancarem el foc i el deixarem reposar 20 minuts més amb la mateixa aigua.

Renteu les patates i poseu-les a bullir en una olla amb aigua abundant, i sal durant uns 20-30 minuts. Per comprovar la cocció de les patates, punxeu-les amb un ganivet i quan les noteu toves, ja les podeu treure del foc i escorre-les. Peleu les patates i aixafeu-les amb una forquilla per fer un puré. A continuació poseu les patates aixafades, la mantega i un raig de llet en una olla al foc. Aneu remenant fins que us quedi un puré llis i unctuós (si cal, aneu afegint llet a poc a poc fins aconseguir la textura que us agradi).  Uns instants abans de treure’l del foc, salpebreu el parmentier.

En una paella molt calenta, poseu el tentacle (1 minuts per banda).

Talleu les pomes a quarts i feu-ne unes làmines molt fines. Poseu una paella al foc amb d’oli d’oliva. Quan sigui calent, poseu-hi les pomes amb dues cullerades soperes de sucre i deixeu que es daurin a foc lent.
Munteu el plat posant el parmentier a la base, el tentacle a sobre, i les pomes a dalt de tot.
