“A Catalunya, elaborem grans caves”

Compagina l’activitat de productor amb el compromís polític amb l’entorn i el territori. Per això, durant diversos anys va ser alcalde de Bràfim i president del Consell Comarcal de l’Alt Camp.

El sector del cava passa moments complicats arran de la caiguda de preus. Què ens ha portat a aquesta situació?

La majoria de vins tranquils del nostre entorn es troben en una situació similar al cava. Els últims anys, s’està produint un increment de la producció al temps que disminueix la demanda, sobretot als països occidentals on se’n fa un consum més habitual.

Veníem d’uns anys de sequera en què havien disminuït els estocs, però aquest recent augment de la producció està provocant una problemàtica amb els excedents.

En el sector del cava, a més, la situació s’ha complicat amb l’entrada d’operadors nous que tenen l’estratègia de guanyar quota de mercat amb preus més baixos. Això, junt amb l’increment de la superfície productiva i la d’altres escumosos que han guanyat molta quota de mercat, ens ha perjudicat  més que als vins tranquils.

La davallada de preus és igual en el raïm que en el vi base cava?

Una cosa porta l’altra. Si el preu del vi baixa, els compradors de vi tradueixen aquesta crisi en un descens de preus del raïm. I això ens està succeint a tots els països productors europeus.

En el sector del cava, el fet que l’elaboració es concentri principalment a mans de dues o tres grans empreses, fa que tot el sector quedi afectat per la baixada del preu del raïm i el vi base cava.

Les cooperatives tenim capacitat per pressionar a l’alça els preus?

Els cellers cooperatius concentrem el 55% de la producció. Però una cosa és produir i una altra és elaborar i comercialitzar, que com dèiem és una activitat que es concentra en poques mans.

El marge d’actuació de les cooperatives i els productors és limitat, encara que, per descomptat, la defensa conjunta dels nostres interessos ens fa més forts.

Quines solucions es proposen des de la Federació de Cooperatives Agràries de Catalunya?

Si volem una solució que tingui futur a mig i llarg termini, ha de sorgir d’un acord entre productors i elaboradors en el marc del Consell Regulador de la DO Cava.

Hauríem de ser capaços d’aprofitar l’espai de negociació que ens ofereix el Consell Regulador per arribar a una situació amb la qual tots ens sentim còmodes. Creiem que cal organitzar la producció, apostar per la qualitat i donar resposta a la demanda del sector de diferenciar el producte segons zones de producció.

A dia d’avui, seguim apostant per poder assolir un acord que vagi en aquesta línia en el marc del plenari del Consell Regulador del mes de desembre.

Regular la producció seria, doncs, una possible solució?

Ajustar la producció a les necessitats que tenen els elaboradors seria molt útil per evitar les dents de serra que fan els preus del vi.

El mercat vol una estabilitat de preus. Aconseguir que els preus del vi es mantinguin entre una campanya i la següent, a més d’una garantia per als productors, també facilitaria que els elaboradors puguin oferir el producte al mercat amb un preu estable.

El Departament d’Agricultura quin paper hauria de jugar?

El sector necessitem que la Conselleria faci pressió perquè el Ministeri d’Agricultura compensi els perjudicis que ha provocat autoritzant, contra el criteri dels Consell Regulador, l’augment de la superfície de les plantacions de la DO Cava, ja que l’expansió que s’ha dut a terme els últims anys és la principal causa de la superproducció que tenim en l’actualitat.

També és important mantenir el Registre vitivinícola actualitzat per evitar possibles fraus, i que s’estableixin totes les mesures al seu abast per ajudar en aquests anys de crisi.

Com podríem prestigiar el cava?

El més important és creure-hi, perquè fem un producte de qualitat. El nostre vi de base cava és molt bo i permet elaborar grans caves. Dels nostres cellers estan sortint reserves d’alta gamma, però també tenim estàndards molt alts en els caves de gamma bàsica que representen el 85% del total.

Els productors i elaboradors catalans estem oferint al mercat un producte molt elaborat i al nivell dels millors escumosos del món.
