Analitzen les avantatges de l’ús de taps de suro durant la segona fermentació dels vins escumosos

Un estudi impulsat per l’IRTA, l’INCAVI i diverses empreses vinícoles i sureres vol analitzar si els vins escumosos poden ser de més qualitat gràcies a l’ús de taps de suro durant la segona fermentació, en comptes dels taps actuals de plàstic i alumini. Els responsables de la recerca recalquen que el suro és un material 100% sostenible, reciclable i biodegradable i apunten que la introducció d’aquests taps a la segona fermentació permetria rendibilitzar els boscos d’alzines, que ara s’exploten només al 50%. Al mateix temps, sostenen que els pocs cellers que utilitzen només taps de suro constaten que proporciona al vi escumós aromes més complexes que els taps corona fets de plàstic. Ara volen analitzar tècnicament aquestes diferències.

L’estudi sobre els beneficis del tap de suro és una iniciativa del grup SensoVI, format pels cellers Recaredo i Gramona, la Fundació Institut Català del Suro, les empreses productores de taps per a escumosos Oller i Tesa, l’INCAVI i l’IRTA. L’anàlisi es farà amb 200 participants que avaluaran diverses mostres de vi.
